Roasted Broccoli & Za'atar Soup

A wholesome blend of broccoli and spinach simmered into a creamy, noursihing soup perfect for a comforting seasonal reset.

A comforting bowl of nourishment stars here. Velvety broccoli and vibrant spinach simmer together into a wholesome, soul-warming soup, finished with fragrant herbs and a touch of creaminess for the perfect seasonal reset.


Ingredients:

1 whole brocoli (whole stalks)

1 large leek

1 large brown onion

1 cup fresh spinach

8 cloves garlic, chopped

2.5 cups chicken or vegetable stock

1 tablespoon lemon zest

1 lemon, juiced

1 tablespoon za'atar spice blend

3 tablespoons heavy cream OR coconut cream

2 tablespoons minced chives

olive oil, as needed

salt

freshly cracked black pepper

Method

  1. preheat oven to 180 degrees celsius (fan forced). lightly grease a baking dish and add chopped broccoli heads and stalks. generously drizzle a coating of olive oil, seasoning with salt and pepper. roast for 20-25 minutes, or until slightly charred and tender.

  2. meanwhile, heat a large dutch oven (or heavy bottomed pot) over medium heat. add a generous drizzle of olive oil. add chopped onion and cook until transparent. stir in leeks and cook for another 5 minutes. stir in garlic and za'atar, and cook until fragrant.

  3. pour in vegetable stock, season with salt and pepper then bring the liquid to a boil.

  4. add the roasted broccoli, lemon zest and juice, and spinach. stir until spinach wilts. using a hand blender, or gently ladle the soup into a blender and blend until smooth. transfer soup back to the pot and stir in the cream.

  5. for the cheesy garlic bread, place the bread on a sheet pan. drizzle with olive oil and lightly brush with garlic, add a mound of chedder cheese on top finished with a sprinkle of za'atar blend. bake until cheese is melted and golden.

  6. serve soup warm, garnished with chives and enjoy with a slice of cheesy garlic bread.
