Chia Spiced Banana Bread

A cosy slice of banana bread, infused with warming chai spices, made gluten-free and gently sweetened the natural way.



GLUTEN-FREE | REFINED SUGAR FREE


Give your banana bread a nourishing twist with an organic chia powder - a cosy blend of cinnamon, ginger and cardamom designed to gently support digestion, circulation and balanced blood sugar.

This gluten-free loaf is beautifully soft and moist, naturally sweetened with maple syrup and studded with rich dark chocolate throughout. Finsihed with a delecate chai glaze, its a simple yet elevated take on a much-loved classic.


Ingredients:

4 overly ripe bananas

1/4 cup coconut oil, melted

1/4 cup organic maple syrup

2 eggs

2 teaspoons vanilla bean extract

1.5 cups oat flour

2 tablespoons organic chai powder

2 teaspoons baking soda

1 teaspoon sea salt

160g dark baking chocolate (pana organic)


Chai Spiced Glaze:

1/2 cup grass-fed butter, melted

1 tablespoon organic chai powder

1 tablespoon organic maple syrup



Method

  1. preheat oven to 180 degrees celsius (fan forced) and line a loaf tin with baking paper.

  2. in a large bowl, mash the bananas until smooth. whisk in the melted coconut oil, maple syrup, eggs and vanilla bean extract until well combined.

  3. add the flour, organic chai powder, baking soda and sea salt. gently mix until just combined - be careful not to over mix. fold through the chopped dark chocolate chunks.

  4. spoon the batter evenly into the prepared tin. bake for 20-25 minutes, or until a skewer inserted into the centre comes out clean. remove from the oven and allow to cool slightly before adding the glaze.

  5. meanwhile, in a small bowl, whisk together the melted butter, organic chai powder and maple syrup.

  6. spread the chai-spiced glaze generously over warm banana bread, serve and enjoy.
